What the program covers
Cooking is a physical skill — you get better by doing it, not by watching.
Each module is built around a technique or concept that transfers across dozens of dishes. Once you understand how to control a pan's temperature, you can cook proteins, vegetables, and sauces with confidence. The lessons are short enough to fit around a busy week, and the exercises use ingredients you'd buy anyway.
Knife skills and prep
How to hold and use a chef's knife safely. Cuts that matter: dice, julienne, chiffonade. Setting up a clean, efficient workspace.
Heat and the pan
Understanding dry heat versus moist heat. When to use high flame and when to back off. Reading colour and sound as cooking signals.
Salt, acid, fat, balance
Why food tastes flat and how to fix it. The role of lemon juice, vinegar, and finishing oil. Seasoning at each stage, not just at the end.
Sauces without recipes
Pan sauces from fond. Emulsification by hand. A vinaigrette that works for salads, grains, and roasted vegetables equally.
Proteins done right
Chicken, eggs, fish, and legumes — each behaves differently under heat. Resting, carryover cooking, and why timing matters more than temperature alone.

How the lessons are structured
Each lesson runs between 8 and 18 minutes. There are no filler segments — if something is covered, it's because it comes up again later. Lessons are grouped into modules you can work through in any order after completing Module 01.
Practice tasks are built into each module. They're not graded, but they're designed to be done in a real kitchen with a real meal at the end.
The module on heat and the pan changed how I cook completely. I'd been burning onions for years because I thought high heat was always faster. Now I actually understand what's happening in the pan.
I finished Module 06 on a Sunday and made a proper dinner from leftovers that same evening. That felt like the point of the whole thing — not a recipe, just knowing what to do.
